This recipe was taken from a magazine. I'll post some more later.

This simple recipe uses a plastic-wrapped potato you can just throw into the microwave. Most grocery stores across the U.S. carry various brands, but we used Easy-Bake by Wade Farms. Of course, you can use a regular baking potato, scrubbed and pricked with a fork. If you can't find green chile salsa, use regular chunk jarred salsa.

1 Easy-Bake ready to-microwave potato (average 9 oz.) or other baking potato

3 oz. cooked chicken breast strips, cubed

1/2 cup canned black beans, drained

2 Tbps. reduced-fat sour cream

1/4 cup green chile sause (we used southwestern organics brand)

Easy Steps
1) Heat potato in microwave for 7 minutes (check package for directions if you're using a different brand). Carefully remove potato and use a knife to remove plastic wrap and slit potato down the middle.
2)Push ends together to open it up.
3)Stuff with chicken, black beans, sour cream, and green chile sause.

How it tasted: I thought it was very good and will continue to make it. I'm not a fan of black beans but it worked well with this meal.
