You do it atop the heat. There is no need to remove it from the stove. Just ignite the alcohol. It will continue to burn only as long as the ethanol is present. This should preserve the flavor, but remove the alcohol. Should burn for 30 seconds tops in my experience.

setting food aflame (flambe) is fairly commonplace in the culinary world.
Ever had Bananas Foster? Try it sometime. (I don't recommend having it while on a cut though. )
Most recipes like this one call for at least half a stick of unsalted butter.

What ever you do, don't use a lot of booze. Very little in fact or you will have too much flame. Have a lid and baking soda handy lol.
