Wondering if there are rules of thumb for calculating what size you can realistically, and naturally, reach.

To answer your question, it's absolutely impossible to calculate. Either way, improving your strength, fitness, and overall health by exercising is a good thing. Size/looks are bonus, but don't let them rule you.

I realise that there can be no absolutes, but whilst i will be training regardless, i wanted to set myself some realistic goals.
Set short term and long term goals. Your short term goals should be building blocks towards the long term.
Why not tell us where you are and what you want? It will be easier to structure your goals if we see some numbers.
