i'm horrible at cooking, and my nutrition program recommends that i eat these foods:
grilled chicken breast
chicken stir fry
steamed brown rice
steamed veggies (broccoli, carrots, spinach)
until i learn how to cook these foods, i'm stuck with eating healthy choice dinners! (grilled chicken and lemon pepper fish)
1. Foreman grill
2. sliver the chicken, hot pan, garlic, bit of oil, ginger, cook it fast, dump on stir fry sauce
3. and 4. Wrap 'em in foil, bake at 350 or 400F until soft
5. read the package for directions
6. Harder veggies: chop into chunks, shot of water, cover, high heat for a couple minutes. For spinach, plunge into boiling water and drain immediately.

As for the potatoes, you could also put them in the microwave for about 7-8 minutes. It takes quite awhile to actually bake them in an oven. If you use the microwave, make sure to put a little cut in the potato first to allow the mositure to escape. I've seen potatoes explode in the microwave before.

some grocery stores have sweet potatoes/baked potatoes wrapped in plastic and all you do is throw them in the microwave for like 8 mins. They're a little more expensive, but worth it if you can afford a little extra $

sweet potato and baked potato - stab it with a fork 5/6 times and put it in the microwave for aroud 4-5mins. then put it in the oven at around 200-225C for 30-45mins
veggies can either be cut then boiled in lightly salted water for 4-5 mins or microwaved for around 3mins. please don't overcook them so they're soggy, this really pisses me off (sorry)
chicken breast should have the skin on when you cook it (you can take it off after, it just helps baste it and retain moisture) add some spices to it if you wish. grill it for around 10-15 mins. cut it in the middle (nmot in half) to check if the middle is cooked. will be dry if u over cook it.
when you make brown rice add a drop of olive oil to stop it from sticking. also rinse the rice first to get rid of the starch and it won't become stodgy or sticky. this makes a big difference. also add half a chicken stock cube to it.
