So I tried the protein bars from the "amazing protein bars" thread and thought they were very good. However, I wasn't thrilled with the consistency and they seemed kind of dry. So, I hunted around online for a recipe that could be modifed - lo and behold, I found one. So here goes:
1 cup natural peanut butter
1/3 cup honey (you could probably use corn syrup)
1/3 cup Splenda
2 Large eggs (or use equivelent volume of egg whites)
4 scoops Vanilla Nitrean
1.5 cups oats
1/4 cup milk
1 tbsp coconut *
2 tbsp sliced almonds *
*just in case these aren't calories dense enough for you, this is a good place to add calories.
Beat together first 5 ingredients. Stir in oats. Add as much milk as necessary to mix. Spread in pan. Sprinkle coconut and almonds on top. Bake at 350 degrees for 15-20 minutes. Cool before cutting.
The total damage, per tray, is:
173 g fat
252 g carbs
202 g protein
I cut it into 16 bars (more like cubes), so that means each one has:
11 g fat
16 g carbs
13 g protein
- I didn't melt the peanut butter or honey first. It might be easier to melt them first and then stir everything else in.
- I didn't grease the pan. I was having some trouble getting them out, so either greasing or using parchment paper might help with that.
- I used vanilla Nitrean - chocolate would probably be a lot better, though I'm very pleased with them as they are!
