I have seen when people use a matched grip when doing dead lifts, but I have seen other people use an inverted grip where one palm faces in and one the other.
Why do they do that?

When you grip the bar with a standard grip, you're not only fighting gravity directly, but also fighting to stop the bar from rolling out of your hands.
A mixed grip takes the problem of the bar rolling out of the equation, allowing you to hold more.
Ahhh thats cool man, I was having that problem about the bar rolling but couldn't work it out.

Bottom line, use any grip you want and see which is most comfortable for you and you can get the most out of.
