I'm looking for the best before-bed snack that will promote muscle growth but not necessarily fat storage.
Right now i usually have half a cup of cottage cheese. I've also heard that milk is good for same reason (slow-acting casein.)
What about peanut butter? Anything wrong with eating un-saturated fats before bed?
Any other suggestions?

yes peanut butter is highly recommended..
as well as cottage cheese..
some nuts are good too

Milk and cottage cheese are very similar, think about it...

I eat Nuts at night post workout and it seems to help with recovery try some good mixed nuts.
well, milk spikes your insulin which isn't the best thing before bed.
It is nice and tasty though to have milk before bed.(and any other time of the day:D)
cottage cheese + pb is a solid and tasty combo

eggs, milk, yogurt, cottage cheese, they're all good.
