My ultimate goal is to be somewhere in between a fitness model and a bodybuilder's physique so I'm not looking to get freaky big.
Aren't those complete opposites? So falling anywhere in between is pretty easy.

i think slow transition to bulk is best idea. Slowly ramp up to maintenance levels. Eat that for a few weeks, then slowly ramp up to your bulking levels. It should limit the initial fat gain.
